I woke up hungry. And I knew exactly what I wanted.
COWBOY BISCUITS!!!!
Yep, those oohey, gooey biscuits that you don't roll out, and are simply pressed into the cast iron skillet and baked. So terribly high in calories, and everything else. But are unbelievably delicious!!!
I ate two biscuits [at a total of 544 calories BEFORE adding some butter and jelly!]. Definitely not a low-cal breakfast, but perfect for a Sunday morning!!!
Because the cowboy biscuits were so dense in calories, I skipped lunch and waited for dinner, which was equally as dense in calories...
...Kraft Macaroni & Cheese Dinner with Gwaltney Chicken Dogs cut up in it. I had two servings of the mac & cheese and 2 hotdogs. And it was worth it! I'm like a kid here. Enjoying every bite full!
So... how bad was my day???
Calories Consumed: 1,374 [-66]
Whew! Who knew I could eat like this and still stay under my limit! Of course, I don't recommend a diet like I've been eating. But this is what a poor man is limited to these days. We are currently living an entiire month [rent, utilities and groceries] for less than I what we were spending on groceries for a month a year ago. And yes... I don't care who tells you that eating healthy is essential. Our economy has forced us into this. We are eating carbs like crazy. Even though we'd love the fresh stuff, it's simply cheaper this way. You begin to learn what gives you the densest portions, for the least expenditure.
But I am NOT complaining. We are so much better off than a lot of other people. And so, for that I am so thankful!!!
And now... I did weigh myself this morning for my weekly report...

Not too bad for this week! I am not complaining!
I did finish the cowl/scarf I was making...
...surprisngly, it came out just as it was supposed to!
I discovered I can even triple the loops if I want, for an even different look...
...not too shabby!!!
I just started on a winter cap, and I'll show you an update on that tomorrow.
As I sit here and write, I have company. My desk sits beside our bed in our bedroom. My office was given over to Texican when he retired. He smokes, and it helps to confine his smoking to mainly that room. For that... I'd gladly take this tiny nook! LOL
And so, I often lay notepads or books over on the bed beside of me while I work. I sometimes have to pull them away from my companion...
...I sometimes wonder if she absorbs the material I've written through osmosis! LOL And yes... there is occasionally a low growl when I must take back a book or tablet! But for the most part, she is a sweet kitty!

***UPDATE ON MOTHER: Mother has a blood fungal infection. Her temp is down a bit. She knew Dad last report. But no one else. She remains in ICU. Please continue to pray!
